A Brief History of Sushi

According to the Japanese, sushi made its debut approximately 1300 years ago. At that time sushi was far from what it is now. The preparation of sushi was done as a technique to preserve fish through the use of salt. During the Edo period (about 600 years ago), the first culinary preparation of sushi as we know it today (fish and rice) was carried out in Tokyo.

Sushi has become extremely popular in North America

Nowadays there are numerous Japanese restaurants in almost every single city. Sushi chefs have created their own versions of more traditional Japanese dishes, most notably the California Roll. However, it is still possible to find authentic Japanese sushi all over the country.

Work side by side with the chef and learn “hands on”.

In this sushi making class for beginners, Chef Gebauer AAC, WCMC, GMC, will take you to the Far East to discover the origins and traditions of sushi in Japan, as well as the contemporary versions here in America.

  • Learn the difference between the two main culinary forms: Tokyo and Osaka style.
  • Fabricate simple rolls and hand rolls under the Chef’s guidance
  • Participants will also prepare nigiri and chirashi sushi
  • Sushi vs sashimi explained
  • Discover etiquette and traditions.
