One week serving COPI any day any time
This past week we featured a number of new COPI dishes for breakfast and dinner; including Blue corn tacos, Sopes, Grits & cakes, Fish Fry and Fried rice. And everyone loved it.
Asian carp were brought to the U.S. from China in the 1970’s to clean up the algae in catfish ponds and sewage lagoons. Flooding of the Mississippi River since the early 1990’s allowed the carp to escape into the major waterways. The Chicago canal system is a major concern for potential release of invasive species into the Great Lakes.
Sharing COPI with the community
We also took the show on the road and shared samples of our COPI cake with the Prescott Chamber of Commerce, the Prescott Farmers Market to name a few. If you can’t beat them-eat them.
